How To Make Chicken Soup

Hey guys...what's up...??? hope y'all alright because i am gonna continue my article about recipe in Indonesia. I already told you at the end of my last article that i am gonna tell you how to make chicken soup, also known as soto ayam. This food is so familiar in every Indonesian people. It almost everywhere with many kind of taste and flavor. This food is also a good combo with buras. In this article, i am gonna show you how to make delicious and mouth-watering chicken soto in easy and simple way. 


    As usual, we need ingredients and other materials in order to make it. In this case, we have to seperate the ingredients. For the main ingredients, we need 1/2 skinless and deboned chicken breast meat, 1 stalk of lemon grass (cut it into 3 stripes), 1 can of coconut milk, 1 glass of water, and 1 can of chicken broth.
For the spice paste ingredients, we need 1 teaspoon of coriander seeds, 4 shallots (already chopped), 1 teaspoon of cumin seeds, 3 cloves of garlic (already chopped), 1 tablespoon of turmeric powder, 2-inch piece of galangal (already peeled), 2-inch piece of ginger, and 1 tablespoon of fresh lime juice. The last ingredients is for the toppings, we need 2 cups of sliced cabbages, 2 cups of bean sprouts, 1 small package of glass noodles, 2 limes, cut into wedges, 2 hard-boiled eggs, and finally 1 stalk of spring onion. As for the materials are blender for the spices and pot. Let's proceed !!!

    Blend the spice paste in a food processor. Add some water if needed. Pour some oil in a pot and add in the spice paste. Stir the spice paste and wait for it to turn light brown. Add in chicken broth, coconut milk, lemon grass strips, and water. Once the broth starts boiling, add in chicken breast cubes. Cover the pot and lower the heat and simmer for 30 – 40 minutes.Next, add salt for taste. Blanch beansprouts, pre-soaked vermicelli / glass noddles, cabbages in another pot of boiling water and transfer them into a bowl once they are cooked. Finally, add in toppings of hard-boiled eggs, chopped spring onions and pour the hot chicken broth into the bowl. Serve hot with lime wedges. It would be much tastier if you eat it with burasa...
