Hey...what's up everybody and welcome back to our blog. Today, i am gonna share my favorite traditional food in Makassar. It is so delight and so tasty. well...it's songkolo bagadang. For those who don't know about songkolo bagadang, i am gonna tell you the information for it. Songkolo bagadang is one of the most iconic and well-known traditional food in Makassar. There are two kind of songkolo actually. The first is songkolo with white sticky rice and songkolo bagadang with black sticky rice and its serve at night only. Okay...enough for the information, lets get through the process of how to make it.
Just like usual, we need ingredients. For the main ingredients, we need 3 ltr of black/white sticky rice, 2 coconut fruit (shredded), 1 tablespoon of salt. For the Serundeng (topping) ingredients are 10 onions, 7 garlics, 2 tablespoon of coriander, 1 teaspoon of salt, 2 bay leaves, and palm sugar sufficiently. Lets proceed to how to make it.
First, soak the sticky rice for 1-2 hours, and then wash it until clean. After that, put it in the steamer pan and steam it until its half-cook. Get it out from the steamer, and then put it in the container. Pour it with coconut milk and stir it nice and easy. After that steam it again until its cook. While we wait it to cook, we need to make the topping. First, you need to blend the onions and garlics, also add some coriander and salt. Mix all the ingredients that has been blended with shredded coconut, stir it well in the pan, put some bay leaves, and stir it ice and easy. After the sticky rice cooked, you need to print it with bowl, put it into the plate or banana leaves if you have some. Finally, sprinkle the Serundeng over the top of the songkolo. To make it more tasty or crispier, add some side dish like salted fish or fried anchovy.
